The G Sensor settings are all about how big of a bump the DVR needs to sense to mark it as a crash and lock the recording.
The units (mg) are measurements of G-Force, 1000mg is what you feel every day, holding you on the ground. 0mg would be what astronauts feel in space.
For most cars and trucks, 500mg is quite hard braking, 300mg is hard acceleration and 400mg is cornering quite quickly.
There are however some limitations, leaving it at 2000mg will pick up any larger accident, but it could miss someone reversing in to you in a car park, If you set it lower, in order to pick up the small accidents, it will also start picking up potholes and speed bumps.
